#RECIPE | Assamese Fish Stew with Aromatic Vietnamese Mint

North East Indian food is known for their typical style of cooking – which is usually, steaming or boiling, and the use of fresh ingredients and flavorful local spices. Today we have one of our favorite home chefs – Geeta from Assam, make an interesting fish dish combining all the trademarks of most cuisines from the region.  It’s a subtly flavored fish stew with seasonal veggies and aromatic Vietnamese mint, “Many have a preset concept that boiled fish is smelly but that is totally wrong” says Geeta. “I was born and brought up in Darjeeling, but life out here has always fascinated me. There’s something so unique about the place – the people, the marvelous and majestic mountains, the moody weather, and then the heritage of the toy train. The toy train ride of the Darjeeling Himalayan Railways (DHR) has always remained a marvelous and delightful experience and was listed as a World Heritage Site by UNESCO in 1999. The highest point of DHR and the highest railway station India – the Ghoom station is at an altitude of 2285 metres. Its shortest tour starts from the Ghoom station. He is the winner of the Delhi International Classical Guitar Competition of 2015 and represented India in the 6th Sri Lanka Guitar Festival, 2016. Gifted as he was, he was also lucky to have been born and raised in a family who showed immense support for his musical passion, and has helped him to get to where he is today. “This flower has been blooming since forever but my village being small, approximately 80 households – most of them with no education, and of course no funds, hardly did anything to make this beautiful place a public tourist attraction. Even though I was born and brought up in this village, I have never seen this flower until 2014, because this flower blooms during the month when our summer breaks gets over. It starts blooming at the end of June and lasts till the second week of August but the peak time is July 15th to 25th. It was in March,2014 when my cousin Mayo and I finally came back home for good after 15 years of my stay in Pune.
