Recipe | Crispy Pork with Bamboo Shoot Juice

Another easy recipe for the R&L readers from our in-house chef/recipe contributor : Mr Vilme. It’s a pork dish, which he made last evening for a bunch of his friends coming over for dinner. Vilme made this dish using very simple ingredients – which was a mix of Naga and oriental spices and sauces, and the result was delicious! Check out the full recipe below: INGREDIENTS 400 gms of fresh Pork (with good amount of fat) 1 large Onion 7 gloves of Garlic 1 medium Ginger 3 green chillies – cut into vertical slits 2 tbsp of Soya Sauce 2 tbsp of Bamboo shoot juice 500 ml of water 3-4 tablespoons of oil Salt to taste DIRECTIONS TO COOK A. Cooking the Pork Cut the pork into big 3-4 chunks; put the pork pieces into a deep vessel – along with water, bamboo shoot juice and salt to taste Cover and cook till the pork pieces are tender – but not fully cooked Open the lid and let it cool B. Preparing the Crispy Pork Slices Cut the …

Our discoveries of various creative minds from the state of Nagaland never cease to amaze us. Apart from being rich in culture, cuisine, heritage, folklore, and ethnicity, the Nagas have been taking the fashion industry by storm for quite some time now. Many young designers and fashion initiators are going official and showcasing their talent every year. Today, we introduce you to two young beautiful young women entrepreneurs – Ari and Vitsi – who began humbly and went on to establish a brand new fashion label ‘The Daughters’ last month. The duo has received plenty of appreciation and love post the launch. So, without further ado, let’s have a quick look at their brand-new fashion journey:   Introduction to the founders of ‘The Daughters’ ‘The Daughters’ was founded by two cousins – Arinaro Longkumer and Vitsino Peseyie. Meet the Roots and Leisure Team

Roots & Leisure was founded by Tiarenla, Sungdi and Amenla from Nagaland, located in the North East of India. HOW IT ALL BEGAN . . . Roots and Leisure was founded by three of us (Tiarenla, Amenla and Sungdi) from Nagaland, which is located in the North East region of India. Our story dates back to 1994 – the year Tiaren and Sungdi met at boarding school in Darjeeling and became good friends. Fast forward 10 years, Sungdi meets Amen in Ahmedabad, while attending engineering college, and they become inseparable – almost like family. Another 10 years later, when Amen moved to Bangalore (in 2014),  she finally got to meet Tiaren, after hearing so much about her from Sungdi. Over coffee, we discussed starting a passion project to try and help promote our Northeastern roots through stories of our local friends from the region. King Chilli Chutney – Naga Style

Recently we had a customer from Delhi, who bought dried king chilli (Raja mircha), from the R&L Shop. We got so excited that someone out there is adventurous enough to try one of the hottest chillies in the world! So we sent him a sampling set of our other spices as well – which are all available to purchase HERE.  And today, we are sharing a very simple recipe of one of the most popular chutneys in Nagaland – the raja mircha chutney. Dedicating this recipe to all those customers – who have dared to try the king chilly 🙂 Ingredients you’ll need: 1 king Chilly 1 large tomato 1 glove of garlic Salt to taste Directions to Make: Roast the tomatoes and chilies over a fireplace.   If you have a fireplace at home, then roast the tomato by placing it on top of the hot ash (from the firewood) facing the fire. Keep turning to cook it evenly. Same way, bury the chili inside the hot ash and keep it for about 8-10 mins …

These Naga Entrepreneurs Are Bringing Indians Closer to Korean Beauty Products

A little introduction to the people behind the brand ‘Skin Concepts’ Skin Concepts is the brainchild of two budding entrepreneurs, Tina and Vivo. Tina is an Arts graduate from Delhi University who returned to Dimapur after a brief stint in Delhi at Jupiter Capital. Tina is currently fully invested in Skin Concepts. While Vivo, who hails from Kohima, is also an Arts graduate  (from Delhi University) and has an MBA degree from James Cook University, Singapore. She has worked in Singapore for two and half years at Glutz Singapore, and is currently working full time as a planning assistant in the Planning and Coordination department for the government of Nagaland. My Experience at Nagaland Hornbill Festival 2014

Our reader Priyanka Mhatre from Mumbai, shares her Hornbill festival with Roots and Leisure.  In December 2014, one of my friends Radhika asked me to join her on a trip to Nagaland. It was a random plan with a fleeting mention about a festival called Hornbill. I always loved impromptu plans, so I agreed to go with this one as well. Luckily, we had a friend from Nagaland, who helped us book our tickets to reach the festival through a convenient route. With just a week left for the trip, I thought of looking up the web  to learn more about Nagaland and the Hornbill festival. My Google search results threw up pictures that looked amazing. Apparently, the festival was organized in a hilly area where the local tribes participated to showcase their culture and lifestyle. Hello there! It’s time to set sail on a journey to discover the undiscovered. The “festival of festivals”, Hornbill Festival 2016 is set to enthrall visitors from across the globe in the mystical North Eastern state of Nagaland. About the festival The Hornbill festival is named after the Hornbill bird, one of the state’s most venerated bird species that finds mention in a number of tribal cultural expressions. As one of the largest celebrations of indigenous warrior tribes of Nagaland, it is only fitting that the festival draws its name from Hornbill. The Hornbill Festival is held at Naga Heritage Village at Kisama near Nagaland’s capital city, Kohima. The Nagaland state government organizes the Hornbill festival every year from December 1 – 10. The first festival was held in the year 2000. This year, three other districts in the state : Dimapur, Mokokchung, Phek– will be given the opportunity to host the mega festival this year – so the festival will be spread across multiple districts this time. Recipe | Fried Spider with Curry Leaves

Are you feeling adventurous? Have you ever tried eating spiders? We recently tried it and added an Indian twist by incorporating curry leaves into the recipe. Despite some initial hesitation, we found the taste to be surprisingly delicious! Ingredients: (From top left – clockwise): Fresh king chili, bamboo shoot juice, garlic, ginger, curry leaves Ingredients:  3-4 cloves of garlic 3 tablespoons of bamboo shoot juice 1 king chili (bhut jolokia) 250 gms of Spider (here we have used edible spider from the local market) Fresh curry leaves 500 ml water Salt to taste Directions: Add the spiders, the bamboo-shoot juice, and crushed garlic into a saucepan and keep stirring for 3-5 mins Add water and salt, and let it come to a boil. Cook for 20-25 mins When the water is drying out, put in the curry leaves and cook for another 2 mins
