Spicy Naga fried pork

Ingredients
  • 1 kg sliced pork
  • 1 tablespoon paprika
  • 3 tablespoons coarse-ground local chili powder
  • 2 cups water
  • 1 tablespoon ground Zanthoxylum powder (roasted in a pan for a few minutes before grinding)
  • Salt to taste

Instructions

  1. Fill a cooking pot with water and place the pork inside. Turn on the stove; add salt and paprika for color.
  2. Bring the water to a boil, then cover the pot and simmer gently until the pork becomes tender. If needed, add small amounts of water as required.
  3. Once the pork is tender, remove the cover.
  4. Cook the pork over medium heat, stirring occasionally, until all the water evaporates and the pork starts frying in its own oil.
  5. Continue frying the pork, flipping it over, until it turns a golden brown color.
  6. Remove the pork from the pot, separating any excess lard, and transfer it to a bowl.
  7. [Special Tip] Now, for the final step that sets this dish apart. In a separate pan, heat a few tablespoons of the pork lard until hot. Turn off the heat and while the oil is still hot, add three tablespoons of coarse ground local chili powder and 1 tablespoon of zanthoxylum powder.
  8. Mix the spices well and pour them over the pork.
  9. (optional) Garnish with freshly chopped green chili, red chili, or ginger leaves. Your deliciously spicy fried Naga pork is now ready to be served!
